Coconut Curry Fish with vegetables

113 g White Fish
1/2 tsp (1.0g) Turmeric Powder
1 tbsp Curry Paste
62 g Reduced-Fat Coconut Milk
91 g Broccoli
98 g Zucchini
48 g Cooked Brown Rice

How to
Preheat oven to 180C and line a tray with baking paper or foil.
Mix together coconut milk, curry paste and turmeric in a small bowl until combined.
Add fish to baking paper (or foil) then chop up broccoli and slice zucchini. Placing around the fish. Pour over coconut milk mixture and wrap up baking paper (or foil) forming a sealed pouch.
Place tray into oven and cook for 12 minutes or until fully cooked and fish is flaking. Remove from oven.
Place cooked brown rice on a plate and top with fish and vegetables. Then pour over the coconut milk sauce and serve.
